Boiled Peanuts
1 1/2 cup kosher salt
4 gal Water
2 LB peanuts
Soak peanuts over night (8hours) in 2 gallons water with 1/2 cup of salt. Drain and add fresh water and a 1/2 of salt. Bring to a brisk boil then lower to a low boil and cook covered for 5 hours. Add 2 cups of water hourly to keep the water level.
After 3 hours check for saltiness. Too salty remove brine and replace with an equal amount of water. Needs salt add a 1/4-cup turn off heat and let it set an hour before bringing back to a boil.
Boil till your softness level is met, about 12 hours. Turn off the heat and let it stand an hour, then drain the brine and store in the refridge.
