Sunday Greens
Mixed collard, mustard & turnip greens (or your favorites)
1 Turnip root diced
1 Onion Diced
2-3 Smoked turkey necks & wings
1 TBS Vinegar
1 TBS Salt
1 TBS Sugar or Splenda
1 qt Ham or Chicken Stock ( turkey )
Pepper \ Cayenne to taste
Combine the turkey necks diced onion & turnip, salt, vinegar, sweetener & pepper with quart of stock in a soup pot and bring to a boil. While this is happening wash and chop your greens if this hasn't already been done.
Once the stock is boiling add the greens and stir. Lower heat and cover let simmer until the greens meet your crunchy level. The longer they cook the more taste they soak up. Check the "pot likker" occasionally for desired salt and pepper level and add water as needed.
When greens are ready pick out the turkey, de-bone and give it to the dog. Stir and serve, save the "pot likker" it's great as a tonic or use as stock in beans, rice or soup.
