Friday Fish Fry...



It's Friday and that means Fish Fry, all you can eat Catfish Night. Here are a few recipes for some things you'll need…

All-purpose Fish Fry Dredge

1/2 cup Flour
1//4 cup Corn Meal
2 TBS Lemon Pepper Seasoning
1 pinch of Celery Seed

Sift together well, coat fillets in an egg wash and dredge through the mixture.

Hushpuppy

1 1/2 cup Flour
1 1/2 cup Cornmeal
1/2 Ts Baking Soda
1/2 Ts Baking Powder
1 TBS Sugar or Splenda
1/2 Ts Salt
1/2 Ts Pepper
2 TBS minced Onion
1 Egg
2 cup Buttermilk

Sift the dry ingredients together. Beat egg and mix with milk and onion stir into dry mix until it forms a sticky dough. Spoon in about 6 spoonfuls at time in the hot (375) fish fry oil, for about 5 minutes remove with a slotted spoon and store on a plate in a 325 oven till finished with the mix.

Fish Fry Coleslaw…

4-cup Green, Red Cabbage and a Carrot shredded or use pre-mix Cole Slaw mix
2 Lg. Radish, shredded
1ts Celery Seed
1ts Dry mustard
1ts Salt
1/4 Vinegar
1/4 Sugar or Splenda
1/3 cup Mayonnaise

Mix the veggies in a bowl, mix the dry spices and sugar with the vinegar and toss well with the veggie mix. Stir in the Mayo and mix well let it set at least a half-hour in the fridge before serving.

Tartar Sauce

1/2 Mayonnaise
1ts Celery Seed
2 TBS Dill Pickle Relish
Juice of 1 Lemon
White part 1 stalk of Green Onion finely diced

Mix the ingredients together well and let stand in the fridge at least a half-hour.
